This isn't your average pimento cheese. It's got heat, tang, and a little sweetness — and it's the kind of recipe you'll be making on repeat all summer long.
Ingredients
- ½ cup good quality mayonnaise (eyeball it — you may need up to ¼ cup more)
- ½ cup pickled jalapeños (we use our own sweet-hot pickled jalapeños — if you don't have those, add ½ tsp sugar to balance the flavor)
- 1 tbsp sriracha sauce (optional, but recommended)
- ¼ cup diced red onion
- 8 oz sharp cheddar cheese, freshly grated
- 8 oz Monterey Jack or mozzarella cheese, freshly grated
- 4 oz sliced pimentos, drained
- ½ tsp sugar (only if not using sweet pickled jalapeños)
- 1 tsp onion chip and dip seasoning
- ½ tsp black pepper
Instructions
- Make your base. Combine the sriracha, mayonnaise, pickled jalapeños, diced red onion, sugar (if using), chip and dip seasoning, and black pepper in a large bowl. Mix until totally combined.
- Add the cheese. Fold in the grated cheddar and Monterey Jack gently with a rubber spatula until combined. Scrape the bowl to make sure everything is incorporated.
- Stir in the pimentos.
- Taste and adjust. More cheese = less creamy. Less cheese = more creamy. More jalapeños = more heat. Make it yours.
- Refrigerate for at least 2 hours before serving — the flavors come together beautifully as it chills.
