This week in the Sweet Diamond Kitchen, we’re putting our brats to work in a whole new way: Brat and Corn Chowder. I made this with Sweet Diamond Mild Brats, our Brown Sugar Mustard, and Fred Shake, and it turned out fabulous!
Browned brat slices, tender potatoes, and a colorful mix of vegetables come together in a rich, creamy broth. The Brown Sugar Mustard brings a little sweetness and tang, while Fred Shake ties it all together. It’s a hearty bowl of comfort that’s right at home on a cool fall evening.

Brat and Corn Chowder Recipe
Ingredients
- 1 lb. Sweet Diamond Foods Mild Brats, sliced (use gluten-free brats as in Fred’s recipe)
- 2 cups red potatoes or sweet potatoes, diced small
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 3 cloves garlic, minced
- 3 tablespoons butter
- 3 tablespoons gluten-free flour
- 4 cups chicken stock
- 1 1/2 cups heavy cream
- 1/2 cup Sweet Diamond Foods Brown Sugar Mustard
- 1 teaspoon Fred Shake Everyday Seasoning, plus more to taste
- 1 cup corn, optional, for added sweetness
- Salt and pepper, to taste
- Parsley, chives, or shredded cheddar, for garnish
Directions
- Brown the brats. In a heavy pot over medium heat, sauté the sliced brats until browned and sizzling. Remove and set aside. If using uncooked brats, follow the package’s cooking instructions and ensure they are fully cooked before serving.
- Build the base. Add the butter to the pot. Sauté the onion, celery, carrots, and garlic until softened and fragrant.
- Make the roux. Sprinkle the gluten-free flour over the vegetables. Stir for 1 minute, until it forms a paste.
- Add the stock. Slowly pour in the chicken stock while whisking. Bring to a gentle simmer.
- Add the potatoes. Stir in the diced red potatoes or sweet potatoes. Simmer for 12–15 minutes, or until tender.
- Add the cream and mustard. Lower the heat, then stir in the heavy cream and Brown Sugar Mustard until the broth is silky.
- Return the brats and add the corn. Add the browned brats back to the pot, along with the corn if using. Gently simmer for 5–7 minutes.
- Season. Stir in 1 teaspoon Fred Shake. Taste and add more Fred Shake, salt, and pepper as needed.
- Finish and serve. Ladle into bowls and garnish with parsley, chives, or shredded cheddar. Serve hot and thick!
Make It Your Own
Use red potatoes for a classic chowder, or try sweet potatoes for a sweeter twist. The corn is optional, so add it when you want that extra pop of sweetness. Once the cream goes in, keep the heat low and let everything gently simmer.
