Ingredients
For the Meatballs
- 1 lb. ground chicken
- 1 c. almond flour
- ½ c. coconut flour
- ½ c. grated Parmesan
- 1 large egg
- 1 tsp. kosher salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 2 oz. Swiss cheese, cut into small cubes
- 4 thin slices deli black forest ham, quartered
- 2 tbsp. extra-virgin olive oil
For the Brown Sugar Mustard Cream Sauce
- 1 tbsp. butter
- 2 oz. cream cheese
- 1 c. heavy cream
- 2 tsp. Sweet Diamond's Brown Sugar Mustard
- 1 tsp. Fred Shake Everyday Seasoning (or to taste)
- 2 tbsp. freshly chopped parsley, for serving
Instructions
Step 1 — Make the Meatballs
In a medium bowl, combine ground chicken, almond flour, coconut flour, Parmesan, egg, salt, black pepper, garlic powder, and onion powder. Mix until just combined. Scoop into 16 small balls, about 2 tablespoons each.
Step 2 — Stuff 'Em
Using lightly dampened hands, flatten one ball into a thin patty. Wrap one cube of Swiss cheese in one piece of ham, then press into the center of the patty and seal tightly around the filling. Repeat with remaining meatballs, cheese, and ham.
Step 3 — Sear
In a medium high-sided skillet over medium-high heat, heat the olive oil. Add meatballs and cook, turning frequently, until deeply golden all over and cooked through — about 8 minutes. Transfer to a plate and wipe excess oil from the skillet.
Step 4 — Make the Sauce
Reduce heat to medium. Add butter and cream cheese to the skillet and stir until melted. Pour in heavy cream and whisk in Sweet Diamond's Brown Sugar Mustard and Fred Shake. Bring to a gentle simmer, return meatballs to the skillet, and cook, stirring, until the sauce thickens — about 2 minutes.
Step 5 — Serve
Sprinkle with freshly chopped parsley and serve immediately. Pairs beautifully over cauliflower mash, rice, or egg noodles.
